Edible Borders: Food, Regulation, and the Porous Body

I did not arrive at food through cuisine, hospitality, or design, but through the question of bodily invasion. My artistic practice has long examined how borders, documents, and institutions discipline the body from the outside. Passports, visas, immigration policies, territorial lines, and administrative classifications determine where a body may travel, how long it may remain, and under what conditions it is recognised. Food introduced me to another form of border-crossing: one that enters through the mouth, dissolves in the gut, and becomes cellular, microbial, hormonal, and emotional material.
Unlike passport control, this crossing occurs every day. It is pleasurable, necessary, repetitive, and difficult to refuse. Eating makes the boundary between the body and its environment materially unstable. Substances cultivated elsewhere enter the mouth, pass through digestive and microbial systems, and participate in the ongoing construction of the body. Soil becomes plant matter; plant matter becomes nutrition; nutrition becomes tissue, energy, waste, sensation, and memory. The body is consequently less a sealed biological unit than a temporary arrangement of materials borrowed from its surroundings.
This porous understanding of the body unsettles the apparent distinction between inside and outside. It also changes how borders can be understood. A border does not operate only at the geographical edge of a state. It is reproduced through documents, standards, inspections, classifications, thresholds, and acts of permission. These mechanisms determine which people, commodities, organisms, chemicals, and forms of knowledge may circulate. Within the food system, the border is dispersed across farms, laboratories, ports, warehouses, packaging facilities, supermarkets, kitchens, and digestive tracts.
Food therefore reaches the mouth carrying far more than flavour or nutritional content. It arrives with soil, water, labour, trade agreements, preservation technologies, pesticides, additives, packaging, certification, and histories of environmental damage. Before something can be recognised and consumed as food, it has already passed through a succession of institutional decisions. It has been cultivated, harvested, processed, transported, inspected, measured, classified, and declared acceptable. The act of eating begins long before ingestion.
The Mouth as a Political Border
The mouth is commonly understood as a sensory opening: a place of taste, pleasure, speech, and nourishment. It can also be understood as a political border. It is the point at which an external substance is admitted into the body and begins to lose its status as an external object.
Ingestion creates a particularly intimate form of assimilation. What is eaten is broken down and redistributed until its previous identity becomes difficult to locate. A vegetable, preservative, bacterium, pharmaceutical residue, or mineral enters a sequence of transformations through which it becomes incorporated into bodily processes. Eating is therefore both an encounter with difference and a process through which difference is metabolically absorbed.
Refusal is equally significant. Allergies, dietary restrictions, fasting, disgust, religious prohibitions, food avoidance, and political boycotts all reveal that ingestion is governed by social and institutional boundaries. The decision to eat or refuse can express belonging, exclusion, discipline, care, fear, resistance, or economic necessity. The mouth does not simply receive food; it negotiates the conditions under which the outside is permitted to become inside.
This negotiation, however, rarely takes place between an autonomous consumer and an autonomous object. What appears at the moment of consumption has already been shaped by regulatory systems and market infrastructures. The consumer chooses from substances that have previously been authorised, standardised, made available, and rendered legible as food. Personal choice occurs within an environment structured by prior acts of institutional permission.
The Label as a Border Document
The ingredient label is one of the most visible expressions of this regulatory process. Although physically small, it operates as a condensed administrative document. It lists substances, establishes hierarchies, translates industrial processes into standardised terminology, and communicates that a product has passed through recognised systems of inspection and control.
A label does more than describe what a food contains. It organises trust. Ingredient lists, allergy warnings, nutritional tables, geographical certifications, expiry dates, organic symbols, sustainability claims, and storage instructions help transform an industrially processed object into something that can be accepted as edible. The label stands between uncertainty and ingestion. It reassures the consumer that unknown materials have been evaluated and that the risks associated with them fall within an authorised threshold.
In this sense, a food label resembles a visa. A visa determines whether a body may legally cross into a territory. A label determines whether a substance may legally enter commercial circulation and, eventually, a body. Both documents rely on categories, evidence, institutional authority, and conditional permission. Both make movement possible while concealing much of the apparatus through which that movement is regulated.
The border text of the label also defines what must remain invisible. A permitted additive appears as a technical name or numerical code, while the agricultural, chemical, and industrial conditions of its production remain elsewhere. A certification symbol communicates compliance without reproducing the inspections, negotiations, exclusions, and compromises that produced it. The apparent clarity of the label depends on extensive acts of compression.
Food regulation is therefore also a politics of translation. Complex ecological and industrial relations are converted into units that can be measured and printed: grams of sugar, percentages of fat, maximum residue limits, acceptable daily intakes, expiry dates, carbon estimates, and legally approved claims. These measurements allow food to circulate across jurisdictions and markets. At the same time, they create an impression that safety can be isolated from the broader relations through which food is produced.
The Hidden Labour of Safe Food
The category of “safe food” appears to describe the condition of a consumable object. Yet safety is produced through labour. Crops are cultivated, harvested, washed, sorted, trimmed, packed, transported, refrigerated, inspected, shelved, and discarded by human bodies operating within uneven economic and political conditions.
Seasonal and migrant workers occupy a particularly significant position within this system. Their mobility often follows the biological schedules of crops and the fluctuating demands of agricultural markets. They move between regions, farms, warehouses, and processing facilities so that food can appear stable and continuously available to consumers. Their bodies absorb the physical cost of bending, cutting, lifting, repetitive movement, chemical exposure, heat, cold, surveillance, and insecure accommodation.
The food label may tell the consumer whether an item is organic, local, healthy, low in sugar, responsibly sourced, or environmentally beneficial. It rarely identifies whose temporary labour made these qualities affordable. The worker disappears from the administrative surface of the product even when the product’s freshness, cleanliness, uniformity, and price depend directly on that worker’s body.
This absence is especially visible in foods associated with purity. White vegetables, carefully graded produce, unblemished fruit, transparent packaging, and sanitised supermarket displays construct an aesthetic of cleanliness. The object appears separated from soil, decay, labour, and bodily vulnerability. Cleanliness becomes a commercial quality achieved by removing visible evidence of the relations that produced the food.
White asparagus provides a useful example. Its pale appearance is produced by limiting exposure to sunlight, often by growing the shoots beneath raised soil beds or opaque coverings. Its whiteness is therefore cultivated through concealment. The crop is valued for tenderness, delicacy, seasonality, and visual purity, while its production depends on intensive manual harvesting performed within a narrow biological timeframe. The clean white shoot condenses a larger system involving soil management, controlled visibility, seasonal migration, physical labour, grading, refrigeration, and cross-border distribution.
The purity of the food object and the exposure of the worker are consequently connected. A product becomes clean, uniform, and desirable through forms of labour that remain materially demanding and socially obscured. The consumer encounters an aesthetic of purity while the bodies responsible for producing it remain outside the frame.
Toxicity, Regulation, and Unequal Exposure
Food regulation frequently treats toxicity as a measurable property of an individual substance. A chemical is assessed according to dosage, concentration, frequency of exposure, and statistically defined thresholds of acceptable risk. This framework is necessary for public health, but it also narrows the field through which harm becomes recognisable.
Exposure is never distributed evenly. The same substance can occupy different social meanings depending on whether a person encounters it as a consumer, an agricultural worker, a factory worker, or a resident living near contaminated land or water. A pesticide residue may remain below the legal threshold on a supermarket product while the worker applying that pesticide experiences repeated and concentrated exposure. A packaging material may be authorised for consumer use while the environmental effects of its production and disposal are displaced elsewhere.
The designation of food as safe can therefore coexist with unsafe conditions throughout its production. Safety at the point of consumption may rely on the transfer of risk to other bodies and environments. Regulation protects certain forms of contact while rendering others less visible.
A decolonial ecological approach asks how these distributions of safety and harm have been shaped historically. Agricultural land, plantation systems, extractive infrastructures, trade routes, botanical classification, and industrial food production remain connected to colonial systems of possession and value. Contemporary supply chains inherit these uneven geographies even when their products are marketed through the language of innovation, health, sustainability, or global accessibility.
The question “Is this food safe?” must consequently be expanded. Safe for whom, at which stage of production, under which conditions, and over what period of time? Which bodies are protected by a regulatory threshold, and which bodies encounter the substance before that threshold is established? Which environments are treated as acceptable sites of accumulation, extraction, or disposal?
The Microbial and Dependent Body
Queer ecology offers another way of approaching these questions by challenging the image of the body as autonomous, bounded, and internally coherent. Human life depends on microbial communities, plant systems, soil ecologies, water cycles, atmospheric conditions, infrastructures, and the labour of other bodies. The body is formed through relations that cannot be contained within the individual.
Digestion makes this dependency particularly visible. Food is transformed through collaboration between human organs and microbial populations. The boundary between self and non-self becomes difficult to maintain when organisms living within the body participate in metabolism, immunity, appetite, and mood. Biological identity emerges through coexistence rather than isolation.
This porous and microbial body complicates institutional ideas of purity. Regulatory systems frequently depend on separating the permitted from the prohibited, the clean from the contaminated, and the natural from the artificial. Yet food is always already relational. Fermentation depends on controlled microbial activity. Agriculture depends on soil organisms and chemical exchanges. Digestion depends on decomposition. Life is sustained through processes that cross and destabilise categorical boundaries.
Contamination within this framework cannot be understood solely as the presence of an unwanted substance. It also describes the unavoidable condition of being materially implicated in other bodies, environments, and histories. Every act of eating involves contact with systems that exceed individual knowledge and control.
Recognising this condition does not require abandoning questions of responsibility or safety. It requires examining how purity and contamination are politically assigned. Certain substances, bodies, and environments are designated as contaminating, while others are normalised as necessary costs of production. The language of cleanliness can protect public health, while it can also conceal labour, suppress ecological complexity, and reproduce social hierarchies.
Materialising Food Documents
My practice approaches these questions through the material transformation of administrative forms. I have previously used fish skin, edible policy documents, seawater, saliva, and bureaucratic materials to examine how institutions act upon bodies. Working with food extends this inquiry from documents that regulate movement to documents that regulate ingestion.
When a food label is transferred onto wafer paper, starch film, agar skin, pectin membrane, or another edible surface, its administrative function becomes bodily. The document can be touched, smelled, tasted, refused, torn, dissolved, or swallowed. Information ceases to operate exclusively through reading and begins to participate in digestion.
This transformation is not intended to make regulation decorative or metaphorical. It exposes the material consequences of apparently abstract language. Terms such as “permitted,” “safe,” “natural,” “organic,” “regenerative,” and “sustainable” enter everyday life through packaging and policy, yet they organise relationships between land, labour, law, and bodily exposure. Converting these terms into unstable edible matter makes their authority available to sensory examination.
The fragility of edible documents also contrasts with the apparent permanence of institutional language. A certificate printed on paper can be archived, reproduced, and cited. The same certificate formed from food material curls, absorbs moisture, grows mould, dissolves, or is metabolised. Its deterioration reflects the instability of the ecological systems that regulatory language attempts to classify.
Such experiments treat eating as a form of reading. The participant encounters the document through the mouth as well as through vision. Hesitation becomes part of interpretation. To consume a statement about safety, purity, or sustainability is to confront the distance between institutional assurance and bodily trust.
From Territory to Metabolism
The study of borders usually begins with territory, sovereignty, and movement. Food reveals that borders also operate through metabolism. They determine which substances may circulate, how risk is classified, which forms of labour are recognised, and which ecological damages remain administratively external to the consumable object.
The food system links land to body through a sequence of regulated transformations. Soil becomes crop, crop becomes commodity, commodity becomes labelled product, and labelled product becomes bodily material. At each stage, certain relations become visible while others disappear. The label enters first because institutional trust prepares the body to accept what follows.
To examine food through the concept of the border is therefore to ask more than what food represents. It is to trace what food carries: legal permissions, chemical thresholds, labour relations, microbial life, environmental damage, historical extraction, and practices of care. These materials do not remain outside the consumer. They participate in the physical and emotional formation of the body.
Eating is an ecological act because it binds distant processes to intimate transformation. It is a regulated act because the substances available for ingestion have already passed through systems of permission and classification. It is a political act because the pleasures and protections associated with food are produced through unequal distributions of labour, mobility, exposure, and risk.
The central question is therefore not simply what enters the body when we eat. It is what has already been permitted, concealed, displaced, and carried before the food reaches the mouth.
